Last year I hopped over to Hilo, it was just a quick day trip to catch up with my friend and her husband, who recently swapped California sunsets for Hawaiian rainbows. I’ve known her since our nursing school days, and I remember them always dreaming about moving to Hawaii. Well, fast forward to a year ago, they were vacationing on the Big Island and decided to check out some houses in this small town in Hilo called Hawaiian Paradise Park. They were doing the classic “let’s just peek at this listing” move when—boom!—the owner spots them and says, “Come on in!” Seriously, people in Hawaii are so nice; it’s the Aloha Spirit in action! And wouldn’t you know it, they ended up buying the house. My friend retired from her nursing gig, and her husband was already living the retired life from his government job. When I was there, I took her to this awesome spot I love called Hawaiian Style Cafe. I don’t get to Hilo often, but when I do, this place is a must. The portions are enormous, and the menu is packed with so many tempting options that choosing just one feels like a culinary crisis! After we stuffed ourselves, we made a sweet pit stop at Big Island Candies. You can’t go to Hilo without grabbing some of their famous macadamia nut shortbread cookies dipped in chocolate—so addictive, you’ll wonder why you didn’t buy more! We did a bit of sightseeing, and then I told my friend I had to make a quick run to Two Ladies Kitchen. They’ve got this mind-blowing mochi, and mochi with chocolate strawberries? Oh, it’s like biting into a little cloud of heaven. Now, I’m not getting any kickbacks from these places, but I’ve got to share the love for the best eats in Hilo! I only had a day, but it was packed with good food, great company, and a whole lot of fun checking out my friend’s new house in Hawaiian Paradise Park. Who knows, maybe one day I’ll move back to Hawaii. Fingers crossed!

Kauai Backcountry Adventures: Splash into Fun Last year during our trip to Kauai, my family and I enjoyed the Mountain Tubing Adventure at Kauai Backcountry Adventures. It was such a relaxing and enjoyable experience for all of us. We lounged on inflatable tubes, lazily drifting down winding irrigation ditches, surrounded by lush tropical foliage.  The backcountry tubing adventure wasn’t just your average lazy river ride. It was a journey through history, as these ditches once transported water to sugar plantations. As we drifted down the waterways, it felt like we were transported back in time, marveling at the resourcefulness of those who shaped this landscape before us. What truly sets this tour apart are the employees and tour guides. They go above and beyond to ensure you feel comfortable and enjoy your experience. They transport you to the waterways on a shuttle, where the tour guide engages everyone by having us share a bit about ourselves and our origins. She also provided some fascinating history about Kauai and explained what activities we would be doing. When we arrived at the tubing site, the guides assisted each of us in getting onto our tubes and accompanied us on our adventure. The tour guides made the trip exceptionally enjoyable. One guide even played the ukulele and sang songs, staying at the back of the group to ensure everyone was making their way through the tunnels smoothly. Before heading back down, we were treated to a delicious lunch, adding to the overall enjoyment of the day. And to top it off, we had the opportunity to take a refreshing swim in a pond with a small waterfall during our lunch break. It was the perfect combination of relaxation and adventure, making it a highlight of our trip to Kauai. Just remember to book the tour ahead of time since it does book up and sell out months in advance. Waimea Plantation Cottages: Where History Meets Hospitality Now, let’s talk about where to rest your weary head after a day of frolicking in the sun. Look no further than the Waimea Plantation Cottages, where history comes alive amidst the coconut palms. These charming cottages were once home to sugar plantation workers and have been lovingly restored to offer guests a taste of old Hawaii with all the modern comforts. We stayed here and had about 6 cottages for my family reunion. It was a great time catching up with family we haven’t seen in a long time. We have wonderful memories of our trip to Kauai in 2023. The Majestic Grand Canyon of the Pacific No trip to Kauai would be complete without a visit to the Grand Canyon of the Pacific, aka Waimea Canyon. Sure, you could stare in awe at its breathtaking beauty from one of the lookout points, but where’s the fun in that? Instead, channel your inner explorer and hit the trails that wind their way through this natural wonderland. Feel the earth beneath your feet, breathe in the scent of wildflowers, and revel in the fact that you’re witnessing Mother Nature showing off her finest work. So Much Fun But wait, there’s more! Kauai isn’t just about tubing, historical cottages, and epic canyons. It’s also home to some of the world’s most stunning beaches, where you can soak up the sun, catch some waves, or simply ponder the meaning of life while sipping on a coconut. And let’s not forget about the food. From traditional Hawaiian plate lunches to gourmet farm-to-table fare, Kauai’s culinary scene is sure to tantalize your taste buds and leave you craving seconds. It’s like hitting the relaxation jackpot while having a blast exploring the island’s natural wonders. Keep your eyes peeled for T-Rex sightings (or at least some seriously breathtaking scenery). But the fun doesn’t stop there! Kualoa Ranch offers a smorgasbord of adrenaline-pumping activities, from zip lining through the treetops to ATV rides that’ll have you feeling like a real-life action hero. It’s a one-stop-shop for adventure junkies and movie buffs alike! Hike ‘n’ Seek: Diamond Head, Manoa Falls, and Makapu’u Point Get ready to lace up those hiking boots and hit the trails, because Oahu’s natural wonders are calling your name! For a challenge fit for Indiana Jones himself, conquer the iconic Diamond Head crater and soak in panoramic views of the island below. Just remember to bring a lot of water because it gets hot and you have to walk up a ton of stairs to get to the top. This is not good for pregnant moms, elderly, or people with heart conditions. Feeling more like a stroll than a climb? No problem! Head to Manoa Falls for an enchanting hike through lush rainforest, where you’ll be greeted by a stunning waterfall at the end of the trail. Or take a leisurely stroll along the Makapu’u Point Lighthouse trail and keep your eyes peeled for breaching whales in the distance. Beach Bummin’ with the Kiddos: Family Fun in the Sun Hey, parents! We know keeping the little ones entertained is no easy feat, but fear not—Oahu has plenty of family-friendly beaches where the waves are gentle and the sand is soft. One of my personal favorites? Kailua Beach. With its pristine shores and calm waters, it’s the perfect spot for a day of sun-soaked relaxation and sandcastle building. And don’t forget to pack the snorkel gear! Hanauma Bay Nature Preserve is a snorkeler’s paradise, with an underwater wonderland just waiting to be explored. Keep an eye out for colorful coral reefs and friendly sea turtles—they’re the real stars of the show! Just FYI, like Diamond Head, you need to make a reservation to go there in advance. But wait, there’s more! Ala Moana Beach Park is another gem for families, offering calm waters and plenty of amenities like picnic areas and playgrounds. And here’s a tip for some added excitement: head to Ala Moana Beach Park on a Friday night and settle in for a spectacular show. Every Friday, the Hilton Hawaiian Village lights up the sky with a breathtaking fireworks display, and you can enjoy the dazzling sights right from the comfort of the beach.
